HEALTHIER SPIN ON MODERN MEDITERRANEAN FAVORITE
On my trip to Vegas back in October, I ate at a new restaurant Cleo featuring Mediterranean cuisine For the first time I tried potato latkes! And they were so delicious. I decided to try to make my own healthier version at home!

I followed the recipe as much as possible. I made some revisions by cutting down the recipe and added some cheese! Also, I didn’t have plain yogurt on hand for the yogurt dressing so for this time I substituted with sour cream (which is obviously not the healthier version). But if you pair it with the yogurt dressing then you will keep it as a great healthy meal!
ATR Tip: I think next time I will cook it on stove over heat versus in the oven. I like when its more crispy so I think cooking over heat will do the trick!
